A quick and easy alternative to eggs benedict’s more traditional english muffin. Just take a muffin pan and place some bread in the bottom, line the edge with bacon (I chose to cook it a little first to drain some of the fat, but it soaks into the bread, which is tasty, if not very healthy. If you do cook it, just ensure to leave it flexible enough to mould into the muffin cup. I suppose, if you didn’t, it would also be good crumbled on top of the bread, as the egg would hold it together.). Crack an egg inside the bacon, and voila! Bake at 350F for about 20min, depending on how hard you like your eggs. Add sauce, if you like. It’s hard to pass up a good hollandaise!
