OMGoodness, the Most Tasty Sweet an’ Sour Pork I’ve Made This Week.

Pork butt/shoulder, whatever you want to call it, is one of the tastiest (and cheapest) cuts there is. I was inspired to do this, in part to use up all my leftover rib marinade. It was such a mishmash of ingredients, I’m not sure I could replicate it, but I’ll try.

3 lb pork shoulder
1 cup apple cider vinegar
1/2 cup brown sugar
1/4 cupish honey
3 tbsp soy sauce
3 tbsp ketchup
2 cloves-ish garlic
1 green pepper, diced
bunch of scallions, chopped
1 14oz can diced tomatoes
1 14oz can pineapple tidbits
leftover rib marinade (see rib recipe).
… I think.
Toss all of it in the slow cooker and remove 6-8 hours later. You may wish to reduce the sauce a bit on simmer for a while or add a few tablespoons of cornstarch to thicken it (just please, mix it with some liquid first, don’t just add cornstarch to your sauce or it’ll be a clumpy mess).
