Carrot Cake!

George’s Carrot Cake from the Black Fin pub in Comox has been a family favourite. Here it is for mom 🙂 Warning: this makes a huge amount – you might want to halve it!

2 cups oil
4 cups white sugar
6 eggs
4 tsp vanilla
Beat these ingredients.

4 cups flour
4 tsp baking soda
2 tsp salt
4 tsp cinnamon
Combine dry ingredients and add to egg mixture.

4 cups grated carrots
2 cups crushed pineapple, drained
2 cups coconut
2 cups chopped nuts

Add remaining ingredients and fold (do not beat).
Bake at 350F for 50-70minutes. Makes two, 10″ cakes. Top with cream cheese icing… of course 🙂
